EL Preferido Loaded Nachos

1 El Preferido Original Dip (for an extra spicy kick use El Preferido jalapeno dip)
Tortilla Chips
Ground beef or Shredded Chicken, mixed with taco seasoning packet (prepare as mix directs)
Refried beans
1 avocado diced
½ red onion diced
1 cup diced tomatoes
½ lime
¼ cup chopped cilantro
½ tsp garlic salt
¼ tsp cayenne pepper (crushed red pepper)
Shredded lettuce

 

1) In a medium bowl mix red onion, tomatoes, juice from lime, cilantro, garlic salt, and cayenne pepper, to make a simple pico de gallo.
2) Pour tortilla chips onto a platter. Layer refried beans then El preferido dip (heated according to package), meat, shredded lettuce, avocado, and then the pico de gallo.

Cheesy Spinach Dip

1 El Preferido Original dip
2 handfuls baby spinach chopped
½ tbsp butter/margarine
¼ diced onion

 

1) Sauté onion with butter in a skillet over medium heat till onion becomes translucent.
2) Turn heat to low and add in spinach and cook for about 2 minutes.
3) Heat dip according to package directions, and then mix in the onion and spinach.

Enjoy!

-for an extra layer of flavor add in cooked artichokes!

 

Buffalo Chicken Dip

1 El Preferido Original cheese dip
1 12.5 oz can chicken, or 1 ½ cups precooked shredded chicken.
3 tbsp hot sauce
1 tbsp ranch dressing
½ cup shredded cheddar cheese
Shredded cheddar cheese for topping

 

1) Mix everything together and sprinkle the top with cheddar cheese
2) Bake at 350 for 15 min, then broil for about 3 min until topping is golden brown.

Broccoli Chicken Casserole

(6 servings)
1 El Preferido Original dip
1 ½ cups cooked Rice
2 cups chopped broccoli
1 12.5 oz can chicken, or 1 ½ cups precooked shredded chicken
½ medium sized onion diced
1 tbsp butter/margarine
¼ cup chicken broth
½ tsp garlic salt
Shredded cheddar cheese for topping.

 

1) Sauté onion and butter in a skillet till the onion becomes translucent
2) Once the onion is cooked mix all ingredients together except the cheddar cheese.
3) Pour into a baking dish and sprinkle the top of casserole with cheddar cheese.
4) Bake at 375 for 30 min, then broil for about 3 minutes until golden brown.

Tex Mex Chicken and Rice Casserole

(6 servings)
1 El Preferido Original dip (for an extra spicy kick use El Preferido jalapeno dip)
1 ½ cups cooked Rice
1 12.5 oz can chicken, or 1 ½ cups precooked shredded chicken
½ cup salsa
½ tsp cumin
½ tsp paprika
¼ tsp cayenne pepper (increase for more heat)
1 cup corn
1 cup black beans
Shredded cheddar cheese for topping.

 

1) Preheat oven to 375
2) Add about a tbsp of water, chicken, cumin, paprika, and cayenne pepper to a small skillet over medium heat to warm and season the chicken. Adding more liquid if the chicken seems too dry. About 4 min needed to heat.
3) Once the chicken is warmed combine all ingredients in a large bowl. Pour into a baking dish and top with shredded cheddar.
4) Bake at 375 for 30 min, then broil for about 3 minutes until golden brown.

Cheesy Tortilla Soup

(8 servings)
1 El Preferido Original dip (for an extra spicy kick use El Preferido jalapeno dip)
1 can (14.5oz) chicken broth
1 12.5 oz can chicken, or 1 ½ cups precooked shredded chicken
1 can drained corn
1 can drained black beans
½ cup salsa
½ tsp cumin
½ tsp paprika
¼ tsp cayenne pepper (increase for more heat)

 

Garnish: Tortilla Chips

 

1) Combine all ingredients into a 2 quart saucepan
2) Cook over medium high till it starts to boil, then reduce to low and simmer about 20 min stirring occasionally.
3) Serve with broken tortilla chips as garnish.

Broccoli Cheese Soup

(6 servings)
1 El Preferido Original dip
1 can (14.5oz) chicken broth
½ cup shredded cheddar cheese
2 cups chopped broccoli
½  medium sized onion diced
1 tbsp butter/margarine
Salt and pepper to taste

 

1) Over medium heat, combine El Preferido dip and ½ of the can of chicken broth, reserving the rest for later, into a 2 quart sauce pan. Stir till cheese has melted and both are combined.
2) Stir in the cheddar cheese and reduce heat to medium low, stirring occasionally till cheese has completely melted down.
3) While the cheese is melting, sauté the diced onion and butter in a skillet over medium heat until thoroughly cooked, translucent in color.
4) Once the cheddar has completely melted down and the onion has been cooked, add in the onion and the rest of the ingredients.
5) Simmer on low for about 30 min until the broccoli is cooked to preference.
